Kaniaki is a smoked semi-hard yellow cheese smoked with apple wood, from organic sheep and goat milk from Kastoria, full of aromas, slightly spicy. It is a new category, for Greek standards, of four-month ripening yellow cheese, which is placed between Caseri and Gruyère and attempts to fill a part of the gap that exists in the range of Greek yellow cheeses.
