DESCRIPTION
The cultivation of oregano concerns the species Orignaum vulgare ssp. Hirtum (Greek oregano). In our country, it is found in a wide variety of soils and climates, from coastal to mountainous areas in island and mainland Greece (Koutsos, Th. 2006, “Aromatic and Medicinal Plants”).

The microclimate of the area of Loutro Larissa, with the composition of the soil, the low altitude, the nutrient elements of the soil in combination with the temperatures of the atmosphere at all stages of plant growth, and especially during the flowering period with the high temperatures, works beneficially imparting excellent quality characteristics to oregano plants. The temperatures of the area during the flowering stage increase the essential oils so that at the time of cutting they have the maximum possible concentration.

Elevation affects climate, just like latitude. In particular, as the altitude and latitude increase, the summer is limited and therefore the time of photosynthesis and the products of photosynthesis, among which are the components of the essential oil, the aroma, are reduced. DESCRIPTION
Thyme (Thymus vulgaris) is an angiosperm, dicotyledonous plant, which belongs to the Tubiflorae order and the Labiatae family. It is a small shrub (up to 30 cm), with upright shoots, extremely resistant, it emits a very pleasant aroma. It is found in the southern and Mediterranean regions of Europe in various parts of Asia and is cultivated in North America.

Thyme leaves, when dried, turn a brown-green color and release their aroma when crushed. Their taste is very strong, slightly pungent and rich. Together with the dried flowers, they are used as a spice to flavor various foods in fish, meat, in various sauces, soups, etc. It is one of the main ingredients of Benedictine liqueur.

DESCRIPTION
Sage cultivation includes the species Salvia officinalis and Salvia triloba. The common sage (officinalis) has adapted perfectly to the microclimate of the area with very good quality characteristics. triloba, the crop was created with seed from plants of Mount Olympus and as a plant with particular ease of adaptability to various environments, it adapted perfectly to the field as a cultivated species, with rapid growth and increased production and always with quality characteristics that make it easily recognizable in the market .

Their uses are in cooking as a spice, but also as a means of flavoring and preserving many foods. It is also used in the form of a decoction in inflammations of the mouth and pharynx, in the common cold and in gastrointestinal disorders. The company

The company “thesaromata” Thessalian aromatic plants was founded by the agronomist Ioannis Karagounis, a graduate of the Aristotle University of Thessaloniki with postgraduate studies in Food Safety and Environmental Hygiene of the Medical School of the University of Thessaly.

He has been involved in organic farming for 8 years as a plant production inspector in certifying organizations.

The practice of agriculture began several years ago and in the last 4 years research began on the organic cultivation of aromatic plants in the area of Loutro Larissa, combining the characteristics of the crops with the characteristics of the area, both the soil and the climate, concluding in the first phase in the cultivation of chamomile, sage with the varieties of officinalis, triloba with seed of the second one from Olympus where it was perfectly adapted to its cultivation in the field. Oregano, honeysuckle and coriander are also cultivated.

Our goal

is to make the most of the quality of aromatic plants in a cultivated degree, producing significant quantities with stable quality, thus protecting the environment, so that native plants are not collected uncontrollably. With the right cultivation care, applying our many years of knowledge and experience in organic crops in accordance with the European Regulation of organic agriculture (can. 834/2007 and 889/2008), we produce excellent quality organic products.
